A Spatchcocked Chicken is a whole chicken that's had its backbone removed so that it lays flat while cooking.  This method promotes even cooking throughout the bird, faster cook times, and exposes more surface area for seasonings.  Excellent on the smoker, the grill or oven roasted over a bed of aromatics.
